A fresh peach has low caloric value and at the same time is rich in beneficial ingredients: carbohydrates, as it consists of 89% water, proteins, fibers many vitamins and minerals: Vitamins C, K, A and E, folic acid, choline, niacin along with phosphorus, magnesium, potassium and calcium and is an important source of phytosterols and sugars (sucrose, fructose and glucose).

A peach compote thanks to heat treatment-canning, succeeds not only to retain all the ingredients of the fresh fruit but for much longer, up to three years.

Peaches for processing are harvested at the peak of their ripeness and processed a few hours later, while fully preserving their nutrients. Unlike fresh that is often collected long before their nutritional content reach its maximum, and while  several days are spent until reaches the retail and then the consumer.

Indeed compote manages to improve fruit and its value: the nutritional efficiency of the ingredients it contains, such as vitamins C and A, is rising dramatically just because of canning. If we add the availability of product throughout the year and the easenes to use, then you really can claim that peach compote is fresher than fresh!
